Fully-Cooked Canned Beef Enchiladas

1 can Crestview Farms Fully-Cooked Beef

2 ½ tablespoons of taco seasoning (we like the Spice Islands brand from Costco)

1 pack of 8 tortillas (our favorite our the La Tortilla Factory Low-Carb Flour tortillas)

2 c. shredded taco cheese

1 can mild green enchilada sauce

1 can mild red enchilada sauce

½ c. water

Skim fat off the top of the beef.  Pour beef into a skillet and mix with 2 ½ tablespoons and ½ c. water.  Shred the beef more as it cooks.  Cook on medium-high heat for about 10 minutes.  In a 9 x 13 pan, pour half of each can of enchilada sauce in the bottom.  Place beef in tortilla shells with shredded taco cheese and roll into enchiladas.  Place the enchiladas in the sauce and pour remaining sauce and any remaining cheese over the top.  Bake for about 25 minutes until cheese is bubbly and shells are just starting to brown.  Serve with Spanish rice, sour cream, salsa and lettuce.
